Pepsin Powder is a white or light yellow powder extracted from the gastric mucosa of pigs, sheep, or cows. Why does Pepsin not Hydrolyze itself while hydrolyzing food Protein?

When a protein forms its specific spatial structure through the coiling and folding of polypeptide chains, some amino acid residues are on the surface of the protein, while others are hidden inside the protein. Phenylalanine, tryptophan, tyrosine, and leucine belong to hydrophobic amino acids. When these amino acid residues form specific spatial structures, they are hidden inside the stomach protease, so the stomach protease cannot hydrolyze itself.
