Theabrownin (TB) is a water-soluble complex polymer,which is a brown polymer formed by the enzymatic oxidation polymerization of tea polyphenols. Its formation process is: tea polyphenols--theaflavins--thearubigins---theabrownin. It exists naturally in black tea, green tea and dark tea, especially in Pu'er tea ( Dark Tea), and is a characteristic component. During the processing of raw material, 80% of theaflavins and thearubigins are oxidized and polymerized to form theabrownins, and their content is doubled, thereby significantly reducing the astringency and bitterness of the tea soup.
