Natamycin E235, a kind of natural antifungal compound produced by Streptomyces fermentation, has broad spectrum and double effect.It is White to creamy-white crystalline Powder, Molecular formula is C33H47NO13, it is slightly soluble in water, insoluble in most organic solvents. The solubility in water at room temperature is 30 ~ 100mg /L. It exhibits good stability in an environment with a pH of 5.5 to 8.5 and is relatively stable to heat, tolerating short-term pasteurization. However, its activity gradually decreases under strong light, high temperature (above 100°C), and acidic conditions (pH < 4), requiring light-protected and sealed storage.
